I have been a stay at home mom since 2003, although living on one fairly small income has been challenging, God has always provided for our family. With a Gross income of aproximately $20,000 we own our own home, actually have two running vehicles and want for very little. Lots of people complain about not having enough money to pay their bills. I have a hard time understanding why. On a monthly basis, we make a mere $1, 356, I had no clue til recently how low that really was. Its funny, but being Poor is more of a mentality than an actuality for most of us.

Menu plan for October 6

Monday- Cheese Enchiladas, Black Beans and Corn, and Spanish rice
Cheese I buy in bulk and I use about 12 ounces in this recipe cheddar and Monteray jack the cheese cost about $3.50 the sauce is 99¢ a can Black beans and corn are 56¢ and 99¢ respectively. The rice I can't calculate since it came with Angel Food and I have quite a few bags, I will just add Salsa and spices to it, a cup of salsa cost less than a quarter, the tortillas are 99¢ and I am not sure how many we will have leftover. The total cost is about $7.28 but we will have leftovers and those will be imported into meals later in the week.

Tuesday, Chili, I hate to admit this, I do this so lazily now. We shop a lot at WalMart because thats where the bank is. I take 3/4 lb Ground beef about $1.50 when bought in bulk, and add two cans chili ready tomatoes (54¢ each) and two cans chili beans in gravy(50¢ each) then leftover black beans and corn and we have a meal $3.58 with leftovers, those leftovers will go towards tomorrows dinner.

Wednesday, Taco salad and baked potatoes bagged salad mix 1.47, taco chips (I use two quarter bags or generic brand at $1.47 a bag) The potatoes are 2.49 for 5lbs and I get 3 meals out of that so 83¢
Top the salad and potatoes with leftover chili and voila a meal for 3.77 with leftovers for lunch.

Thursday We will likely have chicken Cordon kiev, which is a splurge for us, the chicken will cost 3.96, We will have sauteed green beans and Twice Baked Potatoes at 50¢ and 1.50 respectively. 5.96 for the meal and unfortunately this one won't have leftovers.

Friday we will have Pizza sticks, Baked Pizza crust 44¢ topped with herbed cheese 84¢ and pepperoni 98¢ then dipped in leftover pizza sauce (from this weeks meatball subs courtesy of Tammy's recipes) 49¢ this whole meal, yumm, 2.75

Saturday we will have tacos with the lefover tortillas 3/4 lb ground beef 1.50 and cheese 85¢We will probably have the leftover taco salad since I will set half of everything aside. making the meal 2.35

Sunday we will have spaghetti and Meatballs 79¢, Sauce 99¢, meatballs 99¢ whole meal 2.77

The Job Hunt

Over the past month, I have been back on the job hunt....I know we COULD make it on one income, but we really need 1 1/2 to make things more uhm, whats the word I am looking for? Uhm, this will work, LIVABLE.

With gas prices rising, we need more income coming in, less going out doesn't seem to be happening really well, not with EVERYTHING going up.

I have put in more than 20 job applications across the board. Mostly in the field I am going into in school....I am claiming that I will have a job soon. VERY SOON.
God is the provider, and we need him to provide two jobs, I need a full time job and Chris needs a part time job CLOSE to home.

Why do I want to work full time and want him part time? That's easy, I need something to keep my mind off of my pain and keep me busy, He can handle homeschooling Lauren much easier (he proved it last week when he had her, she doesn't fight him the same way she does me) and he is a better father when he is around her more....also, and here is the BIGGEST reason I want him working only part time and me full....I need him happy, he has been miserable in his job since he started, its a long drive and that stresses him out, he hasn't gotten a raise, but rather pay cut after pay cut and responsibilities keep increasing....overall, I need him to be here for us, and that job is killing him.

He has applied at a local grocery store for full time, and I am hoping he gets in there, its 5 minutes from home, good benefits, good hours, and good perks...I know, I used to work for the company....I only quit because I wanted to be a stay at home mom, now I am ready to return to work, but with my leg I have to fight to get a job....who wants someone who can't stand?

I know this isn't one of those overly frugal posts, but at the same time, part of being frugal is knowing when its time to make changes to make things work.

Cooked Ground Beef

This morning I boiled 5 pounds of ground beef, Now what am I going to do with it?

Tonight we are having Sloppy Janes and French Fries,
Sloppy Janes are very similar to sloppy joes, one exception, they are served in hot dog buns instead of hamburger buns.

Other meals that will come from this 5 pounds of meat?
Well We have Stroganoff, Add one can of cream of mushroom soup, 1 can mushrooms, and one cup of sour cream or french onion dip
We have our usual, tater tot casserole, 1 can cream of mushroom soup, 1 can corn drained, 1 pound tater tots, and 1 cup shredded cheese
We can add to basic spaghetti sauce
Tacos are easy too, just add a cup of salsa and a tablespoon of Taco seasoning
Enchiladas, add 1 tablespoon taco seasoning, 1/2 cup of miracle whip, and LOTS of Cheese

since each of these meals uses about 3/4 pound of meat, I get about 7 meals from that 5 pounds. To stretch it further I add chopped onion, green pepper, zucchini, or whatever I have handy to it.

Lets get started Menus

This week, Well we are starting today because I goofed yesterday and only DH had dinner, Lauren and I ate a VERY late lunch so we werent hungry. We also finished our shopping....now I spent a lot to stock, but remember, the grand total spent in August was less than $30 since our foodstamps got screwed up.
Due to my workers mess up, we had $375 to cover August and September.

Now before We get started, we get $165 per month, I know lots do not wish to apply but I want to run our budget through so people know what we have coming in and going out and why I am back in school and looking for a job.

Cheap meals can be quite varried without being stressful on the family.
My family does not like the same things regularly. We can not do a Monday through Sunday Menu and use the same basic menu week in week out, they would rebel.

Budget update

Before we moved, our bills were

that total is 1188 My medical bills average anywhere from 38-240 per month and gas cost about 50 a week there are no groceries at all in that budget.
DH brings home 1320 per month.

After we moved,

Medical still has its large range, but right now is averaging about 100 a month
that nets us about 1117 including our gas and medical bills.

We have nothing in savings and by the time we have paid our bills we have very little to show. Since there are also back medical bills as well as our two cc bills, that aren't there, they are $30 a month and will be being paid off without being used anymore.

New set of goals

Well, frugality became more of a necessity rather than a fun challenge this last month.

It was much harder without any room for error. It didn't always work, and my family now is far from fond of Chicken as that's what I had a large stock of on hand.

Did you know that 8 pounds of chicken will last about 4 weeks even if had for almost every dinner?

I get my chicken breasts on sale from Meijer for 14.98 for 8pounds, 4 pound bags b1g1 free.


We finally were able to restock the fridge and freezer, I still need a few things, but its a lot better than ALL chicken, lol.

We now have 3 pounds of hot dogs, 3 pounds of Bratwurst, a refill of the 8 pounds of chicken, 3 pounds of sausage, and I need to go get ground beef and some more basic staples, we were even out of those....I was never so grateful for a 2lb block of Velveeta cheese this last month, while I am not a huge fan of Macaroni and cheese, or macaroni period for that matter...the month of August saw lots of Macaroni and cheese, I made 3 batches of homemade with that block of Velveeta, I made 3 batches of Macaroni Tuna salad as well, its a nice food for summer when its hot, but now that the weather is cooling, the recipes will become more appealing again. I hate to cook in the summer, nothing tastes quite right.

We will be forming a monthly menu with cost analysis.
Three meals per day, 7 days per week, my goal, $125 per month.
Can I do it? Hmm, We shall see, but I am excited to try.

struggling

Ok our finances stink right now, we are frugal by nature, but this is a bit ridiculous.

We have $30 to make it til Thursday afternoon when I can deposit Chris's next check, its just a little too tight.

We have gotten seriously behind in our bills because of medical bills and whatnot, our foodstamps have been temporarily cancelled thanks to some carelessness and I am beyond frustrated at our situation.

I have however discovered that for about $20 a week I can feed my family pretty well so long as I keep my pantry stocked. I have really done a good job of keeping stocked but as I watch it drain to keep us going its pretty scary. Certain members of our household have had to learn how to accept that sometimes their favorites are just going to have to wait.

Frugal Challenge

What's for dinner?
I have Chicken, Chicken and More chicken
I have Bison Steak
I have Ground Buffalo
I have Pathetic Looking Pork Chops
I have Minute Steaks
I have Hot Dogs
I have a roll of Sausage
I have 3 bags each Frozen corn and Green Beans
I have Salmon
I have chicken Fried steak

I have frozen bread dough
and a goal of spending less than $50 over the next two weeks, can it be done??

Ok, I do have spices and a pretty good pantry full of dry stuff.

Here are my meal ideas
  1. White Chicken Chili made from Dry beans and using Bouillon instead of broth
  2. Chicken Parmesan made using canned sauce and pre breaded chicken out of the freezer
  3. Minute steaks smothered with Canned mushrooms and sliced onions, served on baked frozen bread dough seasoned accordingly (garlic goes on everything, and I have several salt free Montreal steak or chicken seasoning blends, no salt in this house)
  4. Buffalo chicken with baked smiles Butter and Frank's red hot with a touch of lemon juice, all out of freezer
  5. Chicken, Black beans and rice black beans cooked from dry
  6. Pathetic Looking Pork Chops cooked in Crockpot with BBQ sauce and pulled turned into BBQ Pork sandwiches, served with Baked Beans and a loaf of Frozen bread dough
  7. Ground Buffalo Tacos shells and salsa in pantry
  8. Spaghetti with sausage added to the canned sauce with garlic bread out of freezer
  9. Chicken tortilla soup Once again black beans from dry
  10. Lemon Garlic Chicken
  11. Chicken Quesadillas
  12. Hot Dogs, Macaroni salad (tuna, pasta, onions, mayo, and celery)
  13. Chicken Fried steak, white gravy Green Beans and Mashed Potatoes (have gravy mix, need taters)
  14. baked salmon

Looking at these 14 meals, I would need to buy a box of mashed taters, a bag of onions, a bag of regular potatoes to bake, some cheese, and a jar of salad dressing and another stalk of celery.

quick dinner

Normally I wouldn't do this, but we had a huge sale here not that long ago on Chicken Voila, since I had orientation tonight this made a good quick dinner.

I added two chicken breast halves and voila, dinner for 3 quick and easy.

Total cost less than $4 for the whole meal.

Taco Soup Improved

This was an improvised recipe that we really liked.

The original recipe was
14.5 ounce Rotel Tomatoes
1lb ground beef
1 can each
Beef Broth
Corn
kidney beans
Chili beans all undrained
1 packet taco seasoning
1 packet ranch dressing
and 1-2 cans water
Cook in Crock pot all day.

Now we like the original recipe, but since we just moved, I still don't know where everything is, and I didn't realize what we wanted early enough to crock pot this meal.

I used 1 can rotel tomatoes, 1 can beef Broth, 1 can corn, that was it for following the recipe.
I did not have (or could not find) Kidney or chili beans, so I used one can refried and 1 can of Black beans, I do not buy Taco seasoning packets (we buy a huge jar) or Ranch dressing mix, so I used about a quarter cup of powdered taco seasoning, and left out the ranch altogether.
Then, I added some salsa because it seemed a bit bland (we like things hot and spicey here)
I cooked up about 3 lbs of ground beef, divided it into 4 meals, putting 3 away for other uses....and cooked the soup on the stove.

When it was done, We topped it with Mexican Quesadilla cheese blend (asiago, monterey jack, and white cheddar I think), sour cream, and tortilla strips, next time, I think I am gonna make my black beans from scratch and switch the tortilla strips for a quarter bag of doritos, that way we aren't tempted to nibble the strips til they are gone.

Standard of Living

We are just about finished with our move, it significantly decreased our costs, its too bad my medical bills are offsetting any real savings at this point...hopefully that will change soon.

This month has been a real challenge for us, my in laws have made lots of comments about our financial situation, I don't think they really comprehend that even if we made what they do, we still would not live like they live.

Chris is netting about 1320 a month. Our bills are about 1200, plus groceries. Needless to say our budget is VERY tight. I am going back to school if the doctors approve it this week, I will start August 11th. When I get a full time job, with benefits for the family, Chris will switch over to part time employment (his goal is to eventually work from home doing real estate sales)

We will make about $2 an hour if I am working full time than we are making now.
Why would we increase our spending just because we have that extra? To me, that extra will be used to pay off the school debt. To keep us from needing a second car I am hoping to get a midnight job.

My in laws do not understand that money does not rule the world. Even if we made what they made, (Chris's dad is retired from Chrysler) we still would not have two car payments, we would not travel frequently, we would not spend lots on gifts for others.

Now as for gifting, I love giving gifts, but I like giving things that are practical and affordable, and mostly homemade. I just don't feel comfortable giving a days pay per person just because we have it.

I would still be frugal in our choices no matter what our income is.

Smoothies

Its Hot, ok, its not really hot, but I am hot and I want something cold.

For next to nothing, I can fulfill that craving with a strawberry smoothie. I got a 4 pound bag of Frozen strawberries on clearance for $4.80, that will net me more than 10 smoothies, so about 48 cents
The yogurt, From Kroger's 39 cent sale, I use whatever I have, today, its going to be Vanilla Light
The Milk, I use about 6 ounces, you could eliminate this or use juice, or whatever you have on hand, I like the milk, because I don't drink much and I get it in that way, even at $3.19 a gallon, Which is a total rip off, but hey I didn't feel like running to yet one more store. We are looking at 20 cent.

Mix, together in blender, may add Ice to stretch it further. A grand total, $1.07 and I get enough smoothie for me and my 5 year old to share.

Whats going on?

So much to do this week its unbelievable.
Today we have to make a trip out to the new house, we have a couple of boxes to take, have to drop off a sheet at the office, and have to pick up a staple gun to seal the shed.

We are using what we have and putting up landscape fabric instead of screening in the shed to keep out the wasps. We will likely also bomb it too, since they are really bad.

If the storms stay away, we have our Homeschool Ice Cream Social this afternoon. Obviously if its raining, I can't go since I can barely walk at all in the first place.

If we don't go to the social, we will get some more packing done, I may stop by Office Depot and pick up some boxes, or check the U-Haul prices on moving boxes.

This move will lower our bills significantly, but I am still kinda anxious about the whole thing.

Acceptance?

Not my thing.
I just got home from a Chiropractor appointment, I was informed today that my insurance did not pay their part.

As part of a frugal family, you need to be aware of what your insurance covers, we are covered 100% for 24 visits, NO Co-Pay.

They covered the 1st visit, but the next 6 visits were covered with a copay of $30 each....No thank you. I came home, called Blue Cross, now they are reprocessing those transactions and they will be covered at 100% like they are supposed to.

I have too many other bills that aren't covered to pay for things that are.

We Did It!!!!

We are now the proud owners of a 2002 mobile home.
Today we closed, I am so excited, it was a LONG day, but well worth it.

I am so excited, it seems we don't do much for ourselves like that but this was oh so worth it to me.
Our mortgage payment will go down significantly, our gas will increase a little bit because we are further out now, but I dont think that will be a huge increase.

I am just so excited.

Thursday will be our big grocery shop, I have to hit 3 stores this week. Hopefully we will be able to start moving things this weekend or next.

Moving

We are buying a new house, a smaller more affordable house, we close on Monday at 2pm

As far as frugal posts, I have been quiet because I haven't been very frugal lately, we have been running around like chickens with our heads cut off getting ready to move, going to the chiropractor, and just keeping busy being away from home...with not being home however it becomes very challenging.

I am going back to school I start classes on August 11th for medical assisting.
We are going to switch stay at home parents, daddy is going to stay home while I work. He will do the homeschooling and all the routines.

Menu planning?

Ok, Please tell me I am not alone here..
I do a good job of planning our menus I have been doing this for a long time now, just started posting them in hopes it would make them easier to follow.

Our Chicken Chili, we had on Tuesday, DH wanted to go out on Monday. Wednesday we ended up going out as well because we were out at dinner time. Tonight, I have spaghetti sauce in the crock pot, and will boil the spaghetti when I get home from therapy.

Why oh why is it SO hard to actually follow a meal plan. Lunches have been even harder, yesterday nothing looked good at all so I just had a bowl of cereal, Monday and Tuesday we killed off a package of corn dogs, no they aren't good for you, but they tasted good.

Tomorrow, we will likely try for the chicken that was planned, but it drives me nuts that I can plan a menu and someone (usually the BIG kid) complains aboiut it and we end up going out or not eating it for something else.
I am determined whe I finish therapy, we are going to go ONE whole week without going out at all. I know a lot of it right now is my fault because of Tuesdays and Thursdays I am just tired when I get home, but there is no excuse the rest of the week.

Menu Plan Monday #3


Aiming for a High Protein diet like I was instructed to this past Monday is a LOT harder than I thought it would be.

Monday-White Chicken Chili
Tuesday-Traditional Spaghetti and meatballs but the spaghetti will be my ONLY carb for the day.
Wednesday-Grilled Chicken breasts, Baked Potato, and Steamed Broccoli (I have to remember to choose potatoes for Lauren and I that are very small)
Thursday-Pulled Pork Sandwiches, steamed Broccoli, and McCain's Smiles for them (cucumber slices for me)
Friday, Salsa Chicken, Baked Potato leftovers, and a HUGE salad.

Breakfasts, we are having scrambled Eggs and egg beaters, Lunches I am working on, but thats my big struggle right now healthy lunches and snacks.

I was hoping to skip the store til the end of this week, but it looks like I will need to get a couple tomatoes and a Large Onion.
I will also have to be VERY mindful of serving sizes on the carbs, but giving them up altogether will be very hard for me, so I will just watch them, I have already lost weight by cutting back on my meds, and I haven't noticed a difference in the way I am healing either.

Trail Mix

Trail Mix

Trail Mix is a very expensive treat in our house, unless its homemade. The stores sell individual servings for about $1 each. Currently GFS has Country Style Trail Mix on sale for $7.99, That is 33 1/4 cup servings, but a quarter cup is barely enough to satisfy my darling husband.

Homemade is healthier, I can choose to use more nuts and less M&Ms and Raisins, which Chris doesn't particularly care for anyhow.

To make them at home, you can use any combination of Nuts, Dry Fruits and Candy coated Chocolate.

We will be using Equal portions of Cashews, Almonds, Peanuts, with a combined portion of Generic M&Ms and Raisins... I will be packaging it into half cup servings which he will eat over two snack periods. The nuts give a protein boost and help him to get through the day.

I am guessing I am going to be double menu planning, because I know full well Chris will not go for the all chicken, fish and veggies that I was ordered... wish me luck.

New Home?

We are praying, and praying hard for God's will, but DH says to pack up and lets go.

Due to a lot of circumstances we can not control, we have really been struggling as to whether to keep our house or not. Well since we have been struggling with this for several months, we decided to check on mobile homes.

I found several I liked really affordable, but under the circumstances, we weren't sure if that would work either, til today.
I was contacted by a nice lady who works for a mobile home broker and after a lot of prayer I contacted her back today.

What I found out amazed me. Since so many people in Michigan are losing their homes due to circumstances that they can not control (we have taken 4 paycuts since we bought 3 years ago, and properties are not even selling at prices more than 20k less than we owe due to declining values) they have a program with in house financing which could get us a 3 bedroom 2 bathroom mobile home that is about the same size as our house, right across from a playground (a good thing when you have a 5, almost 6 year old) for only $579 a month...almost $200 less than our mortgage.

We will be looking at its outsides on Sunday, since we will be almost there then anyhow. If we like it we will probably head back out there on Wednesday to look at the inside. It is 4 miles north of the in laws, which would be a really good thing to be that close to them, its close but not too close.

That may be where our Stimulus check goes, lol. As for now, I am being obedient to my husband and tomorrow I start to sort and pack. The thrift store may be getting LOTS of stuff during this move since they are on the way.

I am really grateful that we have the opportunity to do this, it will help our family a lot especially once I can go back to work part time, something we were planning on me doing while I went back to school...Maybe DH will become the stay at home parent?

Going Flexetarian?

Well I am terribly bummed. I have been watching what I ate for the last 8 weeks, in the first 4, I lost almost 7lbs total. But, in the second 4 weeks, I gained it all back plus 5. Now I didn't change my eating, I still ate between 1200 and 1500 calories a day, with increased veggies and decreased carbs...I was warned this may happen because the Lyrica I am on causes weight gain but it still has me VERY upset.

So, since the only time I have EVER had success losing weight was when I cut out red meat almost completely. I think I had ground beef (a bite or two) once in the month. I ate chicken a few times during the month, but went almost completely vegetarian otherwise.

I could not possibly give up all meat, but I think to help with getting this weight off and getting it to STAY off, I think I am going to have to go almost completely vegetarian.
I think I will save red meat for a monthly treat. Not only will this have health benefits but really good financial benefits as well.

I routinely can get Bone In Chicken Breasts for 99cents per pound, Ground Beef cost a minimum of $1.79 since we do not buy hamburger.

Today I am testing out a new recipe, I am making Pinto beans from dry. I have NEVER had success with this, but I am determined. Beans mixed with Rice make a complete protein, meaning no meat needed...won't work for Chris, so I will cook up a couple chicken breasts as well, and I will make a Huge Green Salad to go with it. A head of lettuce is two meals here (while bagged is easier, its not usually cheaper) and cost less than $1.19 Tomatoes and mushrooms are both around 1.99 lb too and they are usually good for a few meals as well.
Generally Veggies can be stretched quite a ways and can be bought or grown very inexpensively.

Some of the things you can do with veggies to make a very cheap meal...All prices based on seasonal sales for a family of 3, in the winter I will have a much harder time since I don't like most winter veggies.

Sauteed Summer Squash and Zucchini ($1) an ear of Corn on the cob, (1.00) 2 chicken breasts (1.50) Spices and Marinades (.50) 1 pound mushrooms (1.49), My whole family would be fed for $5.49 or less since I have to guestimate spices (I buy in bulk)

Baked Potatoes (.57), Toppings Sour cream(.25)Butter (.25) Cheese (.75), Salad Lettuce (.65) Tomato (.99) Mushrooms (.50) Cucumber (.25) Lauren and Chris would add a Hamburger on a bun (.39) (1.00) so the grand total, $5.60

See how by taking away the meat portions of these meals, you would drop the price by between $1.39 and 1.50? And remember there are only two people eating the meat in these menus, how much cheaper would it be for a larger family?

Tonight for dinner, We are having Beans, rice, and chicken, Hubby will probably put his in a burrito shell, me, I will serve mine over a bed of lettuce, and Lauren will probably have hers plain. The Beans will be divided before I serve them so there are some left, and I should get 3 cans worth out of this bag or more.

Potatoes

Well we are off and running, I just loaded 8 pounds of potatoes into the oven. $2.50 for 16 potatoes. 3 will be eaten for dinner tonight as baked potatoes, leaving 13 to be converted into twice baked.

Twice baked Potatoes
13 baked potatoes
1 cup sour cream
1/2 stick butter cubed
2 cups cheese divided

Slice potatoes in half, scoop out insides leaving slight shell.
Mash the potatoes, sour cream, butter, and 1 cup of the cheese together.
Refill the potato shells top with remaining cheese and flash freeze til solid.

To reheat this summer, we will use the toaster oven for 20 minutes at 350 or microwave til warm. They will go well with any grilled foods, and tomorrow I am picking up another 5 pounds to see what else I can make since they are only 99 cents for the 5 pounds.

My Grandpas Spaghetti Sauce

Today I had grand plans of making a triple batch of meatballs to go with my Favorite spaghetti sauce recipe, but decided at the last minute that I am just going to use the meat as is in the sauce.

I will be cooking up 3 pounds of ground meat with about a half cup of dehydrated onions and about a quarter cup of dehydrated garlic and about an eighth of a cup of dehydrated Vegetables. Why all the dry veggies? No reason other than I am being lazy. Usually I chop an onion, a bulb of garlic and some bell pepper, celery, and zucchini to go in my sauce, but today I am not up to it, and thats where the convenience of dry comes in handy. Since I tend to boil rather than fry my meat, There will be plenty of water for them to rehydrate. As for the meat, today I am using 1 pound each of ground buffalo, beef, and italian sausage.

I will then rinse and drain the meat and veggies while I open cans, for normal people that is a relatively quick task but since I have not had good luck with electric can openers and I am not using home canned tomatoes (I ran out of the ones that are chopped, next year I am just doing diced or pureed) I have 4 quarts of tomatoes, a 15 ounce can of Tomato sauce and a 6 ounce can of tomato paste and a 4 ounce can of mushrooms (only one because its all I have left) to open. Yes, thats 7 cans and I can only stand for so long.
My grandpa's original recipe only calls for two quarts of tomatoes, but we find that its too thick with only two, you can used diced, chunked, whole (if you want to do a lot of mashing), crushed or Pureed, I use a combination of everything but whole.

As for seasoning, I guess this started back in the day when convenience foods were just getting started because it calls for two packets of spaghetti seasoning, I haven't found a comparable substitute that I like yet, so I stick with what Grandpa used. Genreally I pick up whatever store brand is closest to two for a dollar (Boy inflation stinks, its a good thing this makes a LOT)

I mix everything in my biggest stock pot, thanks to my mother in law, I finally have one big enough that I can make the recipe in ONE pan, lol.
Bring to a boil, simmer for 30 minutes, taste and adjust seasonings (I always add more garlic, basil, and what my spice jar calls Pizza seasoning, its similar to italian seasoning but more spicy) then simmer for about 3 hours on low heat. After 3 hours its time to put on your pasta water, when it comes to a boil and you boile your pasta til al dente the sauce is done.

After dinner, I package up the leftovers, we have A LOT of leftovers since this recipe was designed to feed a family of 8 two meals before the extra two quarts of tomatoes. I think I make this sauce about every two months or so, plus we use cans whenever I am really lazy (with premade meatballs in the crockpot Chris doesn't know the difference, the key is the LONG simmer time)

As for cost, I will calculate out three different cost factors.
Home canned tomatoes cost me 83 cents per quart (would be much cheaper if my tomatoes would come in before November and I got more than a quart off of my six plants, but I digress) $3.32 that way. I bought these ones on sale for $1 per quart, so thats $4, but normally I am more prepared and spend $2.33 on a number 10 can from Sams. When you average the three the tomatoes cost about $3.21 so thats the figure I am going to use.
The tomatoe sauce I get from Sams, but I never pay more than 66 cents for the two 8 ounce cans either so we will figure 66 cents there.
The Tomato paste, also from Sam's (can you tell I like to buy tomatoes products in bulk?) But that averages around 69 cents for a can in the regular stores here. Mushrooms are up to 59 cents per can now.

The meat, Ground beef I get for $1.79 per pound, you can use ground turkey for a lot less, by ground buffalo was free (thanks to MIL and FIL) and the sausage was $1.67, but for normalcy sake we will say I used three pounds of ground beef as thats how I normally do it. $5.37

Stick with it

Yesterday we had a reality check.
Chris was put down to 4 days per week for a while, we don't know how long but for a while.

I had already made a menu plan for the week, but I have had such a hard time sticking with it.
This time we have NO choice but to stick with it.

For breakfasts we will be having
Cinnamon rolls
Yogurt and fruit (twice)
Eggs and toast
Cottage Cheese and Peach
Cereal and milk
Pancakes and Sausage

Lunches will be
Chicken Salad on lettuce
Chicken salad with fruit
Spaghetti Leftovers (I always have leftovers)
Tuna salad on Lettuce
Chili and baked potatoes
and a leftover day

Dinners,
Sunday we are having Ham cooked in the crockpot, Hashbrown casserole, and steamed broccoli

Monday, Chicken Quesadillas, Black beans and Corn (maybe a salad)

Tuesday Spaghetti and Meatballs the sauce recipe is my grandpa's, it makes a LOT of sauce, I am also making the meatballs out of a combination of Buffalo burger, Ground Beef and Spicy Italian sausage) We will get a minimum of 3 meals out of this. Salad and Garlic Bread. (I will make the sauce and meatballs on Monday and just reheat after therapy)

Wednesday, Bratwurst, Buns, homemade Potatoe wedges, and more steamed broccoli (gotta love fresh veggies)

Thursday, Crockpot day, try something new. We hare having Ham and Potato Casserole from Dining on a dime and Garlicky Green Beans will be thrown togther when I get home from Therapy

Friday, I am being lazy. We are having Nachos with the leftover chili from lunch and basic toppings to go with it.

Saturday we will kill off the leftover chili with taco salad and twice baked potatoes.

Now I just have to be DETERMINED to Stick to it.

Spring is in the air

Unfortunately this year I am not likely to be in any shape to actually garden.
Every year since we moved out of apartments we have had at least a few tomato and pepper plants. I have planted from seeds most years but this year was kinda under the weather when it came time to plant. I am considering investing in a Topsy Turvy to plant one plant and hang it, just for that fresh flavor.

Fresh produce is uncomarable to the stuff that you get in the grocery store since for the most part that is not truly local produce. When its been trucked in to your local grocery store its been picked early, and stored for a while, sometimes its been weeks since it was last picked....that actually makes the frozen veggies a better health choice since they are frozen almost immediately after picking to preserve freshness.

It makes our local produce stand that will be opening in about a month and a half seem really really good and worth the sometimes extra expense. They are picked daily and the only transportation they go through is a few miles to get into the city....I can't wait til June.

changes

We are changing our household diet.

Now I know many people eat naturally to begin with, but we...well, we didn't. My pantry was and to some extent still is, lined with pre-made things. Right now though the only real premade thing we have in that pantry is spaghetti sauce, most of the rest is now in ingredient form.

We have had some issues with Lauren's attitude, major issues. So we have decided to give a two week trial to eating Almost all of our meals at home from home cooking.

So far we had spaghetti and no troubles with the attitude, Tonight we had polish sausage and macaroni and cheese (the last of the from a box macaroni and cheese) and no attitude issues today either...I am wondering now since we still ate somewhat processed foods if its not the processed foods that were getting the better of her but something else.

Tomorrow we are trying a new casserole, basically a mexican lasagna in the crockpot while I am at Physical Therapy. Wednesday We are having Chicken tenders, Salad and probably rolls. Thursday is our unhealthy day, I will pick up Rallys after physical Therapy. Friday, we will be having Roast Beef sandwiches with au jus, homemade though. Saturday we will likely have something easy, but I haven't planned that far in advance. If I cook most of our meals I think we have a great shot at the attitude going away and me losing weight. I was down 6lbs 2 days ago, from the beginning of March, however the scale doesn't seem to like me on a daily basis and sometimes it goes right back to where it started, its so depressing.

What's the best way to save money?

Do Not let food go to waste. We had a BAD experience today. I attempted to make a chicken dish. I put the BONELESS SKINLESS Chicken thighs in the crock pot and discovered after a couple hours that they have Bones and skin. YUCK! They smelled so bad I nearly lost it. Needless to say they are garbage. I think they were in the freezer too long or something, they tasted aweful and I didn't even get to use the recipe, I think I will try it again with Chicken breasts, but I will cook and shred the breasts first before I make that meal.

Free stuff

Today we made a trip to Meijer, I got LOTS of goodies, but my favorite is the 10 for 10 sale get the 11th free, I spent nearly $30 on those items. However, I got the benefit of several coupons to make up some free things. The Betty Crocker Cookie pouches were Free with Coupons for 50Cents off doubled, so not only did I get 3 items free, I also got two additional packs of cookies for free too.

Not Cookies aren't the best choices, but for free how can you go wrong. We got lots of side dishes, cereal, yogurt, and other goodies, but I just can't beat Free.

Prescription Savings

My meds are supposed to cost almost as much as my mortgage right now. If you are low income remember that lots of drug companies have programs to assist in getting the meds you need.
Don't be afraid to contact them and ask for help.

Also, we went to CVS on Saturday to fill a prescription for my Proventil. I chose to go there because the script was cheaper and I had a $25 gift card for filling a script there. Well we got there, dropped off the script at the pharmacy, the pharmacist had a coupon to get the first inhaler for free, they still gave me my $25 gift card and I used that to buy a magazine I want to subscribe to (wanted to check it out first) then I bought two packs of Duracell batteries to get $5 in extra care bucks. I needed the batteries had a coupon for $1 off one and $2.50 off the second one. All in all, they paid me $25 to take my prescription and so I got my batteries for free plus the coupons and $5 ECB, can't beat that. And if I need a refill on the meds, I have paperwork to send to the company to get them for free too.

Check your Bills

With all thats been going on I was a bit distressed. Our Car insurance is pulled directly out of our checking account every month. In December we sold my van, so I called to pull it off. The amount they sent me to balance out the remainder of the year was $120 for 4 months, however in January I noticed my bill was still 154.24, $34.24 more than it should have been, but I had misplaced the paperwork, in February, I figured it was just a fluke and I had misread it, but again, they pulled out 154.24. To my delight, last night, I was cleaning behind my loveseat (I wanted to move some furniture around to make things easier on my non working leg) I found the letter from AAA. YAY, so first thing this morning I called my agent, he has 24 hours to call me back before I call to talk to someone else, they owe me $68.48 and if this isnt fixed, we are finding another company to cover BOTH of our insurances.

Accepting Help

Things right now aren't too frugal around here. Even though I prepared ahead of time for my surgery, I was prepared for 2 weeks of recovery time not the nearly 6 months that we are now expecting due to the complications.

When I got home from the hospital, my father in law offered to pay a housekeeper to come in and keep the house maintained while I recover, a good thing with a tornado living here (dd 5)

I contacted my pastor for someone from the church whom I could trust (even though I have been there almost a year, I still don't know a lot of people there He gave me a family in need, the husband had been laid off and she will be coming the first time on Thursday. DD will also enjoy this because as of next week she will be bringing her daughter and mine will love the playtime.

Last night, after a funeral at church, my pastor also dropped off TWO huge grocery bags full of already cooked food for us, granted it was leftover from a funeral, but it will make my life lots easier.

I have always had a horrendous time accepting help even when I needed it, but this has been a learning experience as I truly can't do as much as I was expecting and I am going to learn to accept help from people who offer it.

Valentines Day

Tomorrow is a very romantic Holiday.
How do you do it affordably? Now, I do not know if my husband plans on taking me out tomorrow because of my inability to stand and cook us a nice dinner (which is what we would typically do)

Last year though, we had Chicken Cordon Bleu, made by wrapping Chicken Tenders with strips of Swiss Cheese and ham, I buy the chicken tenders for $2 per pound or less, then I baked til done, about 45 minutes at 350.

We served with a side salad and rolls. For dessert, DH's favorite, imitation French Silk Pie.

I use cookie or graham cracker crust and mix Chocolate Pudding (instant made according to directions with 1 3/4 cups milk for a 4 serving package) I also mixed 1 package dream whip (generic, kroger brand) and combined the pudding and dream whip, comes out almost the perfect texture for French silk Pie.

Grand total expense, about $7 for both of us.

Now because I had complications from my surgery 2 weeks ago, I dont think I will be cooking this, but at the same time, its there if we need it. I will be recovering for about 2 months...so my posts will be kinda sporadic, Our expenses will be increased but not out of control.

When all Else fails, our new endeavor

Ok, nothing really failed, but at the same time, something in me hit hard this year. I want to go back to work, not just any job, but REALLY go back to work, I want to go back to school, get a degree, and go get a real job. We will still be nearly a one Income family when I am working as DH will drop down to just part time and be the one homeschooling our DD.

I have decided, and applied, to go to school to be a nurse. I was studying to do that in college a little over 10 years ago, but things just weren't right back then. I feel God had me there to discover who I was rather than get an education since I couldn't tell you anything I actually learned while there and to prove it, only 2 classes could potentially transfer over. I had a terrible time settling into any one path...which is how it was supposed to be because Nothing would be the way it is today had I continued in school, graduated with an actual degree in a field.

I would have been a work-a-holic (worse than when I met DH) I would not have had our daughter because there wouldn't have been time. I would not have moved to the Detroit area because I would have not have even come back to Michigan. I certainly would not know how to make the best of what we have, because I would have been making enough to spend without thinking (and that is in my genes)

So, now that I am going to be going back to school, We will be getting all of our debt under control (a lot easier with an income that actually exceeds what you actually OWE in any month)
Dh will only continue working to provide for Social Security reasons. His income will all be savings and investments (oh and play money, entertainment really is nescessary sometimes)

I am very excited for what we have learned and grateful that God will be able to work in this new chapter of our lives. I like that healthcare cannot be outsourced to China or elsewhere making it a lot more stable career than what DH is doing in manufacturing as well.

Be Ye Prepared

This past week I made a huge pot of soup, a triple batch of Vegetarian Tortilla Soup, The recipe was actually an alteration on Don't Panic, Dinner's in the Freezer's Chicken Tortilla soup. I subbed homemade Veggie broth and omitted the chicken, we will add that when we thaw the leftovers and reheat it over the next month.

Out of that triple batch of Veggie tortilla soup, I put away 8 packages of soup each one has the potential of being multiple things. I can use the soup as a base for a simple chili by adding beans and a little tomato paste. I can use it for Chicken tortilla soup by adding a chicken breast or thigh. I can use add ground beef and use it as taco meat or burrito filling, or a topping for taco salad. The possibilities are endless.

Since we had already eaten 3 meals out of this pot of soup before I put it in the freezer, we got at least 11 meals out of it. Total cost for those 11 meal bases is about $6
Now I subbed a lot of ingredients, instead of using tomato soup, I used a giant can of tomato juice (since you add water anyhow, I just left that off) it also helps to shop at Aldi, The diced tomatoes and rotel style tomatoes are only 39 and 49 cents per can respectively. Spices come in bulk from either Gordon Food Service or Sam's which ever I get the best deals at when I am running out.

Clutter and Money

What do these two have in common? Clutter costs me money all the time. I can't find this, so I replace it, only to have two when the other one shows up. It keeps me out of the kitchen and out of the house where it becomes increadibly easy to spend more money trying to get things organized.

Why do these things drive us so crazy? I am not sure the answer to that, but I am on the path to decluttering my house, making sure everything has a home and getting my daughter trained to not go through what I have.

Clutter is very costly. I know too well...Oh I don't have any clean dishes, lets go out to eat....or I can't find any socks (not that I didn't just buy 10 pair 3 months ago) so lets go buy a new package....or bills are late because the checkbook got burried under the clutter on the desk, late fees.

I was really blessed earlier this week to learn of The Colossal Clutter Clean up, we are going to work through this, my daughter and I, not only is it going to help our house, but our hearts, Amy has many printable to help us, and I am excited about not only getting my house in order, but also training my daughter to not follow in my path and make those same mistakes I have made in cleaning She also helps with the true issues of clutter, the Heart issues. Its a total blessing to see this, and so encouraging as well.

Groceries on a Budget

Yesterday I went to Meijer, I spent about $50 and came home with 8 bags of groceries. I thought prices were going up.

Yes, its true, prices are ever increasing, however, that does not mean you have to spend alot.
My receipt shows that I spent $55.25 now that includes more than just groceries as I am working on a Baby shower gift for my sister in law as well, and my kitty wanted treats.

They have their buy 10, get the 11th item free. I bought baby carrots, mushrooms, spray butter, 3 jars of Ragu (I even had a coupon to get 50 cents off two, doubled, means one of those jars was free) 2 stuffed sandwiches (Meijer Brand Hot pockets), 4 rolls of Crescent roll dough, 2 Oscar Mayer Wieners, 3 Aunt Millies buns, Lenders bagels, lobster chunks, and Chicken patties, Our grand total for those Dollar deals was $20
After my dollar deals, I got a gallon of milk, $2.77, 6 cans of spaghetti o's, $3 (coupon item 40 cents off 3 doubled), 12 Dannon yogurt pots, $4.80, (coupon $1 off), 10 packets Chipped Lunch meats for DH's Lunch (5 varieties, so he doesn't get bored) $4, 8lbs baking potatoes, $2.50, and Flash Frozen Boneless Skinless chicken Tenders, 8lbs or 14.98 (2 4lb bags B1G1 Free)
The cat treats were $2.39 and 1.69 if I bought both I got the cheaper ones for free with a coupon. For my sister in law, I got a Teether, a Rattle, and a Hat/Socks package for my nephew...those cost almost $9.

All the coupons, bottle slips (from before we gave up pop) We did pretty good. Now if Only I could get the CVS or Walgreens Register rewards to work that well for me, but I rarely get that great of sales.

Reducing consumption

Ok, I know I am not technically reducing consumption for frugal reasons, My church called a Daniel Fast and Meat and sweets have been severely limited in my house.

However, the one thing I have noticed, our grocery bill has gone way down, even out of season veggies and fruits are still cheaper than using meat as your main course.

I am not doing a complete fast, but on Sunday I made Bean and salsa burritos, a grand total for the entire meal to feed 3, less than $3 Monday, I made a Huge pot of marinara sauce, DH gets sausage balls, that whole meal cost $6, but divide that figure by 3, since I will get at least 3 meals out of that batch of sauce., $2 per day
Tonight, We are having Twice Baked Potatoes, (leftovers, but about 15 cents each) and Caesar Salad, DH will get chicken on top of his, A total of about $4 for two meals each.
We will be eating like this til the 29th of January. Right now, I am starting to feel better, so I think it may actually last longer, Tomorrow I am making Vegetarian Chili.

Medical Expenses

Its only the 3rd day of 2008 and we are preparing for a major expense in our house, although anticipated, we were not expecting such a high lay out right off the bat. See, our insurance deductible doubled, so the surgery I am scheduled for on February 1st will be a cash outlay of probably $2500.

Now, for surgery that does not seem unreasonable, except when you add in the fact that, Dh will not want to cook, and I will not be able to lift much so, how do we keep our bills in check?

Through out the month of January, I will be making meals ahead of time that my darling can merely stick in the oven or preferably the toaster oven.

The meals I chose out of the book are meals we have tried, I will make multiples of all so that the entire month of February should be pretty close to covered.
We will have Chicken Tortilla Soup, Chicken Enchiladas, Beef Chimichangas and Stuffed Manicotti.
I will also make French bread Pizzas, Spaghetti and Meatballs, Burrito Casserole, and Roast Chicken breast with Twice baked potatoes. All items I know my family likes, and easy to prepare.
Making 4 batches of each item will net us one meal of each this month, and 3 to be used when it may not be easy for me to do them.

The toaster Oven and small batches are my friends.

Happy New Year

What are you doing to help yourself live within your means this year?
Are your means getting smaller? Ours certainly seem to be, we have insurance premiums coming out and costs going up. The rest of our bills will all stay the same or relatively close to the same.

Are you praying over those means, so that God can stretch them and maximize their potential?

I will be printing off some general ledger paper to keep tabs on our spending today. I already have three things to write in it. I have groceries bought yesterday, gas put in the car yesterday, and two medical bills paid (or at least they will be by the end of the day)

Old fashioned accounting to keep track of where the money is going.

You can not reduce spending, if you do not know where it is going. So our first goal is to see WHERE it is going.
Yes, I could go back and pick apart my check book, but its much easier to just start from scratch.


Another goal for 2008 is to begin appreciating what I have instead of always wanting more. I am already pretty good at procrastinating on getting what I want til I discover I don't really need it.
What I mean by appreciating what you have, is, well, Taking better care of what God has already blessed us with. Kimberly Eddy at A Joyful Momma puts it so nicely in her e-book, Thriving on One income When I read her book I had never thought about things in such light, but it does make so much sense. Why would God bless you with something better when you do NOT appreciate what he has given you.
I guess it all goes right back to determining what the difference is between a Need and a Want.
